Ingredients
- 1 can King Cup Sardines, lightly drained
- 2 eggs
- 2 slices bread
- 1 tbsp onion, chopped
- 1 tbsp tomato, chopped
- 1 tbsp spring onion, chopped
- 1/4 tsp black pepper
- 1 tbsp butter or oil
- Cheese, optional
Instructions
- Beat eggs in a bowl.
- Add sardines, onion, tomato, spring onion, and pepper.
- Mix gently, keeping some sardine chunks whole.
- Heat butter or oil in a pan over medium heat.
- Pour in the egg mixture.
- Cook until the bottom is set.
- Fold or flip carefully and cook until just done.
- Toast the bread.
- Place the sardine omelette over the toast.
- Add cheese if desired and serve warm.
