Sardine Omelette Toast

Ingredients

  • 1 can King Cup Sardines, lightly drained
  • 2 eggs
  • 2 slices bread
  • 1 tbsp onion, chopped
  • 1 tbsp tomato, chopped
  • 1 tbsp spring onion, chopped
  • 1/4 tsp black pepper
  • 1 tbsp butter or oil
  • Cheese, optional

Instructions

  1. Beat eggs in a bowl.
  2. Add sardines, onion, tomato, spring onion, and pepper.
  3. Mix gently, keeping some sardine chunks whole.
  4. Heat butter or oil in a pan over medium heat.
  5. Pour in the egg mixture.
  6. Cook until the bottom is set.
  7. Fold or flip carefully and cook until just done.
  8. Toast the bread.
  9. Place the sardine omelette over the toast.
  10. Add cheese if desired and serve warm.
