Sardine Sisig
A creative sardine version of sisig with garlic, onion, chili, calamansi, and a creamy finish.

Ingredients
- 1 can King Cup Spicy Sardines, lightly drained
- 1 tbsp cooking oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 chili, chopped
- 1 tsp soy sauce
- 1 tbsp mayonnaise, optional
- 1-2 calamansi
- 1/4 tsp ground black pepper
- 1 egg, optional
- Chicharon crumbs, optional
Instructions
- Drain some of the sardine sauce but keep 1-2 tbsp for flavor.
- Heat oil in a pan over medium-high heat.
- Saute garlic and onion until fragrant.
- Add the sardines and chop lightly with a spatula.
- Cook for 3-5 minutes until the mixture becomes drier and slightly toasted.
- Add chili, soy sauce, and black pepper.
- Turn off the heat.
- Mix in mayonnaise, if using.
- Squeeze calamansi over the sisig.
- Serve with egg and chicharon crumbs if desired.
