Tortang Sardinas
A simple sardine omelette made with eggs, onions, and King Cup Sardines. Crispy outside, soft inside, and perfect with rice.

Ingredients
- 1 can King Cup Sardines, lightly drained
- 2 large eggs
- 2 tbsp all-purpose flour or cornstarch
- 2 tbsp onion, finely chopped
- 1 tbsp spring onion, chopped
- 1 small chili, chopped, optional
- 1/4 tsp ground black pepper
- 2-3 tbsp cooking oil, for frying
Instructions
- Place sardines in a bowl and lightly break them into chunks.
- Add eggs, flour, onion, spring onion, chili, and black pepper.
- Mix until combined. The mixture should be thick enough to spoon into the pan.
- Heat oil in a nonstick pan over medium heat.
- Spoon the mixture into small patties or one large omelette.
- Fry for 2-3 minutes on one side until golden.
- Flip carefully and cook the other side for another 2 minutes.
- Transfer to a plate lined with paper towel.
- Serve with rice, ketchup, or spiced vinegar.
