Ingredients

  • 1 can King Cup Sardines, lightly drained
  • 2 large eggs
  • 2 tbsp all-purpose flour or cornstarch
  • 2 tbsp onion, finely chopped
  • 1 tbsp spring onion, chopped
  • 1 small chili, chopped, optional
  • 1/4 tsp ground black pepper
  • 2-3 tbsp cooking oil, for frying

Instructions

  1. Place sardines in a bowl and lightly break them into chunks.
  2. Add eggs, flour, onion, spring onion, chili, and black pepper.
  3. Mix until combined. The mixture should be thick enough to spoon into the pan.
  4. Heat oil in a nonstick pan over medium heat.
  5. Spoon the mixture into small patties or one large omelette.
  6. Fry for 2-3 minutes on one side until golden.
  7. Flip carefully and cook the other side for another 2 minutes.
  8. Transfer to a plate lined with paper towel.
  9. Serve with rice, ketchup, or spiced vinegar.
