Spicy Sardine Rice Bowl with Egg

A spicy sardine rice bowl is a small meal that never feels bitin. Hot rice catches all the rich tomato sauce, the sardines bring the heat, and a fried egg turns it into the kind of bowl you want to mix together before taking the first bite. It is simple, filling, and ready with very little cleanup.
I reduce the sardine sauce for a minute or two so it becomes thicker and clings to the rice instead of pooling at the bottom. Keep the egg yolk runny if you can; the yolk softens the spice and makes the sauce extra creamy. Add cucumber for crunch, calamansi for brightness, or more chili oil if you want a stronger kick.
