Classic Ginisang Sardinas

Classic ginisang sardinas is one of those dishes I make when I want something warm and satisfying without spending too much time in the kitchen. Garlic, onion, and ripe tomato turn the sauce from the can into something fresher and more homemade, while a little chili gives the whole pan a gentle kick.
The best part is how forgiving this recipe is. Add a splash of water if you like plenty of sauce for your rice, or let it simmer a little longer for a richer, thicker finish. Serve it straight from the pan with calamansi on the side and a generous helping of hot rice.

Heat oil in a pan over medium heat.

Add garlic and saute for 20-30 seconds until fragrant.

Add onion and cook until softened and slightly translucent.

Add tomato and cook for 2-3 minutes until it breaks down and becomes saucy.

Pour in the King Cup Sardines with the tomato sauce.

Add chili, if using.

Gently spoon the sauce over the sardines. Avoid stirring too aggressively so the fish stays in good pieces.
