Tortang Sardinas

Tortang sardinas is an easy way to turn one can into a filling breakfast, lunch, or baon. The sardines bring plenty of flavor on their own, while onion and spring onion add a fresh bite. Once the mixture hits the pan, the edges become golden and crisp while the middle stays soft and savory.

I like this torta with a little chopped chili, but you can leave it out for a milder version. Drain most of the sauce before mixing so the patties hold together, then fry them over medium heat instead of rushing with a very hot pan. A little ketchup, vinegar, or calamansi on the side is all it needs.

    Place sardines in a bowl and lightly break them into chunks.

    Add eggs, flour, onion, spring onion, chili, and black pepper.

    Mix until combined. The mixture should be thick enough to spoon into the pan.

    Heat oil in a nonstick pan over medium heat.

    Spoon the mixture into small patties or one large omelette.

    Fry for 2-3 minutes on one side until golden.

    Flip carefully and cook the other side for another 2 minutes.

    Transfer to a plate lined with paper towel.

    Serve with rice, ketchup, or spiced vinegar.
