Sardine Bicol Express Style

This sardine Bicol Express-style recipe brings together creamy coconut milk, ginger, chili, and spicy sardines in one deeply flavorful pan. It is inspired by the rich, fiery character of Bicol Express, but made for an easy everyday meal using ingredients that are simple to keep at home.

Cook the aromatics first so the ginger becomes fragrant, then let the coconut milk simmer gently until it begins to thicken. Add the sardines with a light hand so they stay in good pieces. Bagoong gives the sauce extra depth, but it is optional. Serve with plenty of rice because the creamy, spicy sauce is the part you will want to finish.
