Spanish Sardine Aglio Olio Pasta

Spanish sardines make aglio olio feel special without making the recipe complicated. Their seasoned oil carries plenty of flavor, so it becomes the base for gently toasted garlic and chili flakes. The sardines add richness and turn a simple plate of pasta into a satisfying meal.

Save a little pasta water before draining because it helps the oil coat every strand instead of settling at the bottom of the pan. Add the sardines near the end and toss carefully so the pieces stay intact. A squeeze of calamansi or lemon is important because it lifts the garlic and oil and keeps the finished pasta bright rather than heavy.

    Cook spaghetti in salted boiling water until al dente.
