Spanish Sardine Garlic Toast

Spanish sardine garlic toast is one of my favorite ways to make a quick snack look and taste a little more special. Crisp bread supports the rich sardines, while the creamy garlic spread adds tang and ties everything together. It works for merienda, a light lunch, or an easy plate to share.
Choose a sturdy bread and toast it well so it does not soften too quickly under the sardine oil. I like to finish each piece with black pepper, chopped herbs, and a few chili flakes. Assemble just before serving for the best crunch, with extra calamansi nearby for anyone who wants more brightness.
